Let's
start with what so many of us walk over unthinkingly: the soil.
It is the most important basis of wines - and our wine business.
We are lucky because the whims of geology have granted us a
range of very good and very varied soils.
Ideal locations for each of the various types of vine that
feel at home here and which can therefore fully develop their
own characters and individuality.
So we treat our soil with care. And we do everything we can
to maintain their natural character and vital energies.

Producing only the best conceivable result from the natural
resources.
Quality
from the start. It requires effort to turn what is taken by
the vines from the good soil into good wine. Right around the
clock and right through the year.
That starts with pruning the vines which is aimed not at the
greatest yield but at the best quality.
The appropriate care of the soil and the protection of the
plants are part of this, as is thinning out the foliage during
ripening. And then the meticulous selection before the harvest.
That reduces the volume of the harvest once more but it ensures
that only ripe and thoroughly healthy grapes find their way
to the cellars.

Only when passion and experience combine can something outstanding
be created.
To
allow very fine wines to be created from the musts, we concentrate
on the blend of knowledge and experience that is to be found
in winegrowing families that have been combining their work
with passion for generations.
And we concentrate on the latest technology that helps us to
prepare the wines in such a way that the variety, the particular
vintage and the whole terroir are reflected in them.
For generations we Hochdörffers have also been pursuing another
interest, that of distilling brandy. We distil highly esteemed
brandies and liqueurs with the same passion from ripe fruit
and fine berries and from the house's grapes and yeast.
